Where it comes from

It begins in the oven.

It begins with very little — flour, white wine, olive and sunflower oil, a pinch of salt. The recipe behind Dorellini has belonged to Puglia for generations, where good food has always come from a few honest ingredients and a little patience — baked slowly, until every ring turns golden and crisp.

For a long time it stayed right there — part of everyday life in Puglia, familiar to everyone who grew up around it. The recipe never traveled far, but it didn't need to. It was enough that it worked.

How we make it

The same recipe, built to last.

Our production keeps the original recipe almost untouched — the same simple ingredients, the same shape, the same oven-baking that gives Dorellini their crunch. What changed is everything around it.

The dough is mixed and shaped in a modern facility built for consistency, so every box tastes like the next. Every stage is followed — from the flour that comes in to the bag that goes out.

We didn't modernize the recipe. We modernized everything that protects it.

Many imported taralli arrive past their best. Dorellini is built not to.

    An aluminized inner film keeps out light, air and moisture, from the moment the bag leaves the line.

  • Baked to order

    Production is scheduled on real orders, never to fill a warehouse.

  • Fresh on arrival

    Around sixty days from oven to shelf — a box reaches you with four to five months of freshness still ahead.

Our production runs on HACCP, certified to BRC and IFS — the food-safety standards the world's most demanding retailers require. Audited, documented, renewed every year. For us they aren't a badge — they're the baseline.

Cleared for the US.

Reaching another country takes more than a good product. Our facility is FDA-registered and runs in full compliance with FSMA — the U.S. food-safety law — down to labeling, allergen control and full batch traceability. Nothing crosses the ocean that isn't cleared first.

Followed, every stage.

From the flour that comes in to the bag that's sealed, every step is checked and recorded. Simple ingredients don't mean less attention. They mean there's nowhere for a shortcut to hide.
