Where It Comes From

It begins with the recipe.

Flour, white wine, high-oleic sunflower oil, extra virgin olive oil, and sea salt form the Puglian recipe behind Dorellini, kept in the family since 1927. In the oven, the small rings take on their warm golden color, toasted aroma, and crisp, crumbly bite.

For a long time it stayed right there, part of everyday life in Puglia, familiar to everyone who grew up around it. The recipe never traveled far, but it didn't need to. It was enough that it worked.

Modern production protects what defines the recipe: its ingredients, proportions, ring shape, and oven baking. Those are what give Dorellini their color and crunch. Technology brings control and consistency around them.

The dough is mixed, shaped, baked, cooled, and sealed in a modern facility. Time, temperature, hygiene, and every production stage are monitored so one bag opens with the same character as the next.

An aluminized inner film helps block light, air, and moisture from the moment each bag leaves the line.

Production follows real demand, rather than filling storage without need.

Fresh on arrival.

Around sixty days from oven to shelf, a box reaches you with four to five months of freshness still ahead.

Audited, documented, renewed every year. For us they aren't a badge, they're the baseline.

The facility operates under HACCP and is certified to BRC and IFS standards. These systems cover food safety, quality controls, documentation, and regular independent audits. Certification is reviewed and renewed on schedule.

The facility is FDA-registered and operates in compliance with FSMA requirements for food sold in the United States. That includes labeling, allergen controls, sanitation, and batch traceability before Dorellini enter the US supply chain.
