Where are Dorellini made?

Dorellini are made entirely in Italy, in the Puglia region, the homeland of the tarallo. Our Italian identity isn't just on the label: every step of the supply chain is Italian, from the wheat to the dough, from baking to packaging. We're proud to state it on the box: "From Puglia · Since 1927".

How are Dorellini made, and what tradition do they come from?

Dorellini come from the Apulian tradition of white wine taralli — one of the oldest and most loved recipes of Southern Italy — and from a story that began in 1927. They're oven-baked, not fried: a dough of simple ingredients, shaped into the classic ring, then slowly baked until crisp and golden. To reach the quality we aim for, modern machinery recreates the craftsman's hand gesture, keeping the timing and the proportions of the old method.

Are Dorellini fried?

No — Dorellini are oven-baked, not fried, and we state it on the package: "Oven-Baked, Not Fried". It's a deliberate choice: oven baking gives the authentic crispness of traditional taralli without the oil absorption of frying, keeping the product lighter and more digestible.

What does "artisan" mean to us?

For us, artisan is not a label, it's a way of working — and even though the production today is modern, that hasn't changed. It means respecting the right timing of the dough and baking, checking every batch, choosing real ingredients over chemical shortcuts, and accepting that a well-made product asks for more care than a hurried one. It also means that each Dorellino may show small, natural variations in shape or color: those are the marks of a real product.

Is the wheat you use Italian?

Yes. Our wheat flour is made from grains selected and milled entirely in Italy. Choosing Italian wheat means supporting our country's agricultural chain and a quality that stays consistent, recognizable and traceable.

What should Dorellini taste like?

Dorellini are crispy, crumbly and light. On the first bite you should feel a thin shell that crumbles gently in the mouth — neither too hard nor powdery. The flavor is balanced: you can taste the wheat, the white wine, the olive oil and a subtle hint of sea salt. They're not meant to overwhelm with strong flavors, but to be enjoyed calmly, one after another.

Are they too salty?

No. We use sea salt carefully: enough to bring out the other ingredients, never so much as to make the snack heavy. If you're used to heavily salted industrial snacks, Dorellini may taste more balanced — and that's exactly the effect we're after.

Are they too hard or too crunchy?

Dorellini have the classic crunch of traditional taralli, not the softness of a breadstick or a light cracker. They're meant to be bitten with confidence and paired with cheese, cured meats or a glass of wine — or simply enjoyed on their own. That said, they aren't hard: they're fragrant, and they crumble pleasantly in the mouth.

Are they different from the taralli I had in Italy?

Dorellini come from the Italian tradition and are made in Puglia, faithful to the classic recipe of white wine taralli. That said, everyone has personal memories tied to a particular tarallo — local recipes, family variations, regional habits. Try them with an open mind: you'll find an honest, simple product, made the way it should be.

What makes Dorellini different from other taralli — and when do you enjoy them?

Many taralli are made to a price — lower-grade oils, preservatives, ingredients chosen to keep costs down. Dorellini follow a different path: real ingredients, 100% Italian production, no palm oil, no additives, no GMOs.

As for when: there's no rule. A break at the office, an after-school snack, an aperitivo paired with cheese or a glass of wine, a moment to yourself, or an open box to share with friends — Dorellini fit wherever you want them, at any point of the day.

Are Dorellini truly 100% Made in Italy?

Yes. It's a statement we make on our packaging with full responsibility: Dorellini are 100% Made in Italy — from Italian wheat flour to production, from the traditional recipe to the packaging, every step takes place in Italy, in Puglia.

Ingredients & Recipe

Why do Dorellini contain both extra virgin olive oil and high-oleic sunflower oil? Wouldn't only olive oil be better?

This is a question we often hear, and it deserves a transparent answer. We use both oils because each plays a specific, complementary role.

Extra virgin olive oil brings the aroma, the authentic flavor and the nutritional value of the Mediterranean tradition. High-oleic sunflower oil — a non-GMO selected variety, naturally rich in oleic acid just like olive oil — gives the dough the right crumbly texture, an even bake and a freshness that lasts over time without preservatives.

Both oils are clearly declared on the package, in order of quantity as the law requires. Nothing is hidden: the list you see is exactly what's in the product.

Why don't you use only olive oil?

Some traditional taralli are made only with olive oil, others with a blend: both belong to Italian tradition. For Dorellini we chose a blend because it gives that light, non-greasy crispness that defines the product, while keeping the aroma and value of extra virgin olive oil. It's a choice driven by technique and taste, not by cost.

Do Dorellini contain palm oil?

No. Dorellini contain no palm oil, no hydrogenated fats and no tropical oils of any kind. It's one of our core commitments, stated clearly on the package: "Palm Oil Free".

Do they contain preservatives, colorings or additives?

No — no preservatives, no colorings, no artificial flavors, no additives. The long shelf life of Dorellini is natural: it comes from the quality of the ingredients, the slow traditional baking and packaging designed to protect freshness.

Are they GMO?

No, Dorellini are completely GMO-free, including the high-oleic sunflower variety we use, which is obtained through traditional selection methods.

Why is there white wine in the ingredients? Can you taste the alcohol?

White wine is a traditional ingredient in Apulian taralli: it makes the dough crumbly and aromatic. During baking the alcohol evaporates completely, leaving in the finished product only a delicate aromatic note.

What are the "sulfites" listed in the ingredients?

Sulfites are naturally present in the white wine used in the dough. They're listed on the label because the law requires them to be declared for sensitive consumers, even though they are present in very small quantities. Anyone without a specific sulfite intolerance can enjoy Dorellini with no concerns.

Do Dorellini comply with food safety regulations?

Yes, rigorously and on multiple levels. Because they are made in Italy and exported to the United States, Dorellini comply at the same time with two of the strictest regulatory systems in the world: European food safety regulations, among the most demanding anywhere, and the U.S. regulations enforced by the FDA and FSMA. For us this isn't a burden — it's an added guarantee for anyone who chooses Dorellini: every pack is the result of a process monitored at every step, from raw materials to the shelf.

Does your facility comply with FDA and FSMA regulations?

Yes. Our facility is FDA-registered and operates in full compliance with the FSMA (Food Safety Modernization Act), the law governing the safety of food intended for the American market.

This means our production process, raw material controls, allergen management, equipment cleaning and batch traceability all meet the standards required to export food to the United States. Our procedures are documented, verifiable and regularly updated to stay aligned with regulatory changes.

What food safety certifications do you hold?

Our facility is certified to the leading international food safety and quality standards:

  • HACCP (Hazard Analysis and Critical Control Points): the system that identifies, evaluates and controls hazards at every stage of food production.
  • BRC (British Retail Consortium): one of the most rigorous food safety standards in the world, widely recognized by global retailers.
  • IFS (International Featured Standards): an international standard certifying that production processes meet strict quality and food safety requirements.
  • FSMA: full compliance with U.S. regulations for the safety of imported foods.

How do you check the quality of Dorellini before they reach consumers?

Quality is the result of an ongoing system of controls across the whole production chain. We verify incoming raw materials — flour, oils, wine, salt — through testing and supplier traceability documentation. During production we constantly monitor critical parameters such as baking temperatures, processing times and equipment hygiene, following HACCP protocols. Before shipping, every batch is checked against the required quality and safety standards.

On top of this, we are subject to periodic inspections by independent third-party certification bodies, which verify our compliance with BRC, IFS and our other certifications. We don't just say we're good: qualified external auditors confirm it, regularly.

Are Dorellini traceable from production to consumption?

Yes, completely. We use a batch traceability system that lets us follow every Dorellini package from the raw materials of origin to the point of sale. On every package you'll find two key pieces of information:

  • Lot No: uniquely identifies the production batch a package belongs to.
  • Best If Used By: indicates how long the product keeps all of its quality.

If needed, this lets us trace back at any time to the raw materials used, the date and time of production, the controls performed on that batch and the whole distribution chain. Our U.S. storage warehouses are certified too, and operate under strict criteria for food safety, temperature, humidity, hygiene and batch rotation, in full compliance with FDA and FSMA regulations. From production in Puglia to the moment of consumption, every step is monitored, documented and traceable — for us and for you.

How do you prevent allergen contamination during production?

Allergen management is one of the most strictly controlled aspects of our facility, in line with HACCP, BRC, IFS and FSMA protocols. We apply specific procedures for cleaning and sanitizing equipment between production runs, separating processing lines, training staff continuously and performing laboratory checks to minimize the risk of cross-contamination.

Because our facility also produces other foods containing allergens such as sesame, milk, soy, mustard and pine nuts, we provide the "May contain" statement on our labels. It gives anyone with allergies or intolerances the information to make an informed choice — a cautious approach we believe is the right thing to do, even when the actual risk is minimal.

How many calories are in a serving of Dorellini?

Each single-serving bag of savory Dorellini contains 180 calories — a balanced amount for a snack that lets you treat yourself without going overboard. It's a thoughtfully sized portion: enough to satisfy, never so much as to weigh you down.

Are Dorellini suitable for children?

Yes. Thanks to the simplicity of the ingredients, the absence of preservatives, colorings and additives, and the balanced, not overly salty taste, Dorellini are suitable for the whole family, from kids to adults.

Are they suitable for vegetarians or vegans?

Yes, Dorellini are suitable for both vegetarians and vegans: they contain only plant-based ingredients — wheat flour, white wine, high-oleic sunflower oil, sea salt, extra virgin olive oil.

Do they contain allergens?

Yes, Dorellini contain allergens, and the composition may vary by flavor: each recipe in our range has its own ingredients and therefore its own allergen profile. For this reason we always recommend reading the label on the package carefully before eating. On the label you'll find:

  • The complete list of ingredients, with allergens highlighted in bold as the law requires.
  • The "Contains" section, which declares allergens present as ingredients.
  • The "May contain" section, which flags possible traces of allergens due to processing in the same facility.

Are they gluten-free?

No, Dorellini contain gluten, as they are made with wheat flour.

Packaging, Shipping & Freshness

How are Dorellini packaged?

Dorellini are packaged in high-barrier single-serving bags, gathered inside a sturdy outer box. Each bag is made with an aluminized inner film — a technical solution that makes a real difference to the final quality.

The aluminized film does three essential things:

  • Blocks light, which over time alters the oils and reduces fragrance.
  • Creates an oxygen barrier, slowing the natural oxidation of fats and preserving flavor.
  • Protects against moisture, keeping the signature crispness until the moment you open the bag.

Thanks to this, the Dorellino you open today has the same fragrance, crispness and aroma as the moment it came out of the oven — quality kept without preservatives.

Why is the package a multipack with 36 bags? Can I get a smaller one?

Our package is designed as a multipack of 36 single-serving bags, so it can accompany you for over a month at a pace of one snack a day. It's a format made for sharing and for family enjoyment. The individual bags aren't intended for separate sale: they are the serving size within the main package.

What does "20% Extra Free" on the box mean?

It means the package contains 30 standard bags plus 6 extra bags free, for a total of 36 — a little extra for those who choose Dorellini.

How long do Dorellini last? Can I store them for a long time?

The natural shelf life depends on the recipe: savory Dorellini, 12 months from the production date; sweet Dorellini, 18 months. Once at home, store them in a cool, dry place, away from direct light and heat. Once you open a single-serving bag, enjoy it right away for maximum fragrance.

Are Dorellini really fresh, even though they come from Italy?

Yes — and we built our supply chain specifically for this. Many taralli imported from Italy reach the market already in the second half of their shelf life, which costs them fragrance and flavor. Ours don't, because we work just-in-time: production is continuous and scheduled on actual orders, not to fill warehouses. Counting the roughly 45 days of logistics and transit from Italy, Dorellini reach the shelf in about 60 days from production — which means that when the product reaches you, at least 4–5 months of optimal shelf life remain. The fragrance you find when you open the bag is the same as a tarallo just out of the oven.

I've had bad experiences with other taralli arriving broken or crumbled. Is it different with Dorellini?

Yes, and we understand the concern — it's one of the most common problems with taralli sold online: many are shipped in simple plastic bags, with no real protection, and arrive broken, crumbled, or reduced to powder. We've taken a different approach, because the product should reach you exactly as it left the oven:

  • Every Dorellino is protected by its single-serving, high-barrier bag with an aluminized inner film that shields it from light, air and moisture.
  • The bags are gathered inside a robust, well-structured outer box, built to withstand transport.
  • The box is engineered to arrive intact, keeping both the packaging and the fragrance fully preserved.

On returns, an important point: because Dorellini are a food product, by law we cannot accept returns of packages bought for reasons of personal taste. This is a regulation that protects food safety, and it applies to every producer in the industry.
